My boyfriend comes from a very traditional old school Italian family. When I first started dating him and I met all of them I so enjoyed the way they still had Sunday dinners at the table all together. These dinners took place in his Grandfathers home where generations have sat and had Sunday dinners. There recipes are old and have not been changed and I learned quickly not to try and change them. You may get killed trying to do so lol. My favorite is what I call their Fiore Tomato salad. There are no measurements to it just a few basic ingredients that are very healthy for you. And great in this weather. We usually sit by the pool after we have grilled our other accompaniments to our meal and eat our tomato salad.
Simple recipe goes something like this:
10 Tomatoes nice and ripe
Handful of Basil
5 cloves Garlic
Salt to taste
1 Green pepper
1 hot Italian pepper
1/4 cup Canola oil
Handful of Parsley
Mix together an let it sit in frig for about an hour. The benefits from this salad are great but, my favorite part is the tomato juice that comes from this salad. We eat it with a nice loaf of Italian bread. Almost like a dessert. This taste great with a nice london broil and sateed greens or potato salad.
